In province of Rimini a careful and exact olive tree preparation realized from Pasquinoni mill and cold squeezed, gives birth to another of our masterpiece: Must extra virgin olive oil. It has a light celery vein and an almond aftertaste that makes it an ideal condiment to aromatise broth, vegetables and legumes that have a rather simple taste. It's excellent to brad, brochettes and pinzimonio. It kindles everything with an elegant note thanks to his trevigiano chicory lightly prickly fragrance and to its perfumed herbaceous recall. Thanks to the presence of olive-groves on the hills around Rimini it will be possible starting from the next campaign (2000/2001) to produce an extra virgin olive oil, called "Arimolio", coming from oru local olive plants. This oil will derive from those trees, whose acidity-level reaches an oleic level never superior to 0,1% - 0,2%. The particular acidic composition and the phenolic substances make of our oil the greatest extra virgin olive oil both for its nutritional values and for its peculiar taste too, what is confirmed also by the best gourmets. |

The fruitful and adequately gravely soil of the sweet Romagnole hills, in perfect sintony (harmony) with the mild and temperate Adriatic coast climate, has born those blooming olive-groves that today cover the hinterland of Rimini. Harmonic borns from the best olives and has a softly prickly aroma. It is the prince between the extra virgin olive oil thanks to the almond aftertaste that is made rich thanks to an artichokes herbaceous note that is still soft and thanks to an high phenolic antioxidative concentration. |

The excellent quality of this oil is assured by sever disciplinary in production , it has been awarded the title of "DENOMINAZIONE DI ORIGINE PROTETTA" ( PROTECTED DISEGNATION OF ORIGIN). The D.O.P. oil is obtained from old and traditional varieties of local olives, 60% "Correggiolo" and the rest minor varieties. The olive picking is carried out by hand or with mechanical implements during the months of October and November, directly from the plant and avoiding contact between the olives and the ground. The trasformation of the olives into oil guarantees the integration and the typicality of the product thanks to the rapid milling of the olives carried out within two days of picking , at a temperature inferior to 27 °C. The oil "Colline di Romagna"D.O.P. is green with gilded reflexes, an intense aroma of olives, it accompanied by the aroma of freshly cut grass , a fruity taste enriched with an aftertaste of almonds, artichokes and tomatoes. |
